I had been cooking more, paying closer attention to what was actually in the condiments I used every day. Seed oils, gums, preservatives, refined sugars. They were everywhere, even in the foods that felt like they didn’t belong. The more I paid attention, the harder it became to look away.

Olive oil was the ingredient I trusted most. It had flavor, history, and a kind of integrity that others different.

So I did what any reasonable person would do: I stopped buying condiments and started making my own.
